Expat Life, Day 64: Friday Next and Niçoise Salad
Well, the time I went back came about sooner than I thought it would. Mike’s dad was in town today so I wanted to make an awesome dinner served on equally awesome plates and remembered there was a gorgeous marble cutting board at Friday Next that I wanted.
So I went back and looked around,
had lunch there,
came home with goodies,
shopped at the market for dinner with my father-in-law, Juda,
and made niçoise salad for dinner.

Niçoise salad is one of my go to’s to treating a guest right. It’s healthy, tastes fantastic, and more or less, easy to throw together. Best of all, it looks fancy as fck and really pops with all the colors of the rainbow.
For the salad, the staples for a niçoise are lettuce, potatoes, eggs, niçoise or kalamata olives, green beans (which I’m allergic to and miss sooo much), tomatoes, and tuna (you can use canned tuna, which is very common, or substitute with chicken). I made my own marinade for the tuna, which consisted of mustard, garlic, thyme, lemon zest and olive oil, and steamed whatever veggies needed to be cooked.
