Quinoa Kimchi Fried Rice
I spent my adolescent years in Trumbull, CT, USA so it’s safe to say I am pretty “white-washed”. I’ve never really felt like a a true Korean-American, but as I get older and cook more and more, my Korean side tends to shine through especially when I’m making a quick, don’t-need-to-think-about-it meal.
This is an Americanized take on Kimchi Fried Rice. It’s made with quinoa instead of rice! Because quinoa is so in… or maybe it’s last season…
